The Barrios referred to here is the family, Barrios, and their respected restaurant in San Antonio, Texas. The food they are most famous for serving is called "Tex-Mex". There is a forward by Emeril Lagasse of television fame. He explains that he really likes this food and he also really like Diana Barrios. These recipes are for authentic Tex-Mex cuisine. The author has filled this cookbook with the food that is real Mexican, but has a tasty Texas twist.

As an example the very first recipe is for "Enchilada Gravy Sauce" which is a good name for this delicious sauce. It's simple and it is made like gravy using flour to thicken your sauce. This recipe makes three quarts of the sauce. Enough to feed a large family with a lot of enchiladas.

There are more than eight hundred Tex-Mex-style restaurants in San Antonio. This one is the one that Esquire magazine praised. So check out the recipes in this helpful cookbook and even learn to make Flour Tortillas, Tamales and Pico de Gallo and many more tasty and spicy dishes.
