The recipes presented by Ms. Williams have been thoroughly tested and were developed by the Pennington Biomedical Research Center. The object was to demonstrate tasty and healthful recipes. How about a "Roasted Onion and Garlic Sandwich"? Maybe not. Although it might be great, I would prefer items like "Sweet Cheese Crepes" or "Grilled Spring Vegetable Pizza". There are dishes to make with hominy and tofu, okra or pumpkin. These recipes sound interesting and might convince the chef in your house to try something well off the beaten path and at the same time, good for you.
